shredded or chopped American cheese

thinly sliced roast beef, coarsely chopped
Cooking Directions:
Preheat the oven to 425 degrees F. Butter a 2-quart baking dish.
Bring a large pot of salted water to a boil and cook the elbows according to package directions, using the lower end of the cooking time range.
Meanwhile, heat the oil in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally, until softened, and golden brown on spots, about 6 minutes. and bell pepper and cook until slightly softened, 2 to 3 minutes.
Heat the half and half, paprika, garlic powder, and cayenne in a medium skillet over medium-high heat until it just simmers. Reduce the heat to low, add the cheeses, and heat, stirring, until smooth. Add the cooked elbows, the roast beef, and about three quarters of the onion and peppers. Transfer to the baking dish and top with the remaining onions and peppers. Bake until bubbling and golden brown in spots, about 15 minutes.
